Jan 4, 2018 — Not sure if you know the 3-2-1 method, if you do, don't use on ribs, they always come up overdone at 225*F. What I do is and my son now does with his Silverbac Grilla Grill is a 2-1-1 method. 2-1-1. Smoke for 2hrs @225*F. Wrap in foil for 1hr. Unwrap and brush on your sauce and cook @ 250*F 1hr.

As mentioned above two things need to be checked. 1st, get a calibrated reporting thermometer with at least two probes, one being for the grate, and verify the grate temp vs setting on the smoker. I use one from ThermoWorks. 2nd, rubs containing sugar can create char since the sugar burns easily.

May 10, 2024 — Ok so at 250°f the ribs will take 5-6 hours, then I better start the ribs around 11am & the meatloaf at 1pm for done time to around 5pm. Should I get the silver skin off the ribs tonight & get them rubbed down with seasonings & then put the ribs back in the fridge so they will be ready to go. Thanks.

Sine I got it (in 2018), I was never able to get it to hold temperature. Swings of -50 to +75 degrees Fahrenheit were always a problem.

Jun 15, 2020 — The brisket I cooked had a small smoke ring and tasted like a mild roast. I smoked it for 5 hours and got a decent bark on it. Then wrapped it for 5 hours until about 202 degrees.
